Delicious Recipies for Lamb

I was raised on home cooked meals and I wanted that for my family too!


We have always eaten home-raised meat just to know what is in the meat we are eating!


Lamb is just like any other meat that can be used for many recipies! It has a delicious flavor and it very versatile to use along with being very healthy for you Some times I just salt it and cook it just like beef or chicken without any spices.


These recipies are not too involved -- basically because I don't have the time to cook recipies that take a large amount of time! We are just too busy & I know that your are too!


I hope you enjoy the following Recipies but most of all, the time spent with your family while you are cooking! Get those kiddos involved to make it a family affair!

Lamb Feta burgers with Cucumber Sauce


These burgers can be made ahead of time to have ready for dinner or

a cookout! So easy and tasty!


Ingredients:

1 lb. Lamb Burger 1 cucumber peeled, grated and squeezed very dry

1/2 c Feta cheese 3/4 c sour cream

3/4 t dried oregano 1 T fresh mint leave

1/2 t natural salt 1 T red or rice wine vinegar

1/2 t black pepper 4 large onion slices

4 small pita breads 4 large tomato slices


  • Break up lamb in a medium bowl. Sprinkle feta, oregano, salt and pepper over meat;

  • stir with a fork to combine. Divide into 4 portions. Flatten to about 4 inches wide. Refrigerate.

  • Mix cucumber, sour cream, mint, vinegar, and salt and pepper to taste in a small bowl.

  • Refrigerate sauce until ready to serve.

  • Grill burgers, covered, 4-5 minutes per side, turning once, on a preheated grill, for medium-well burgers.

  • Heat the pita breads until warm, cut in half.

  • Spoon a teaspoon of sauce onto one side of the pita bread, add the burger, top will more sauce, onion, and tomato.



Sausage Burritos


This is a great weekend breakfast recipe that is easy and fun to make. Use the left-over sausage mix for a fantastic dip!


Ingredients:

1 lb. Hot Italian Lamb Sausage

1 8oz block of cream cheese

1/2-3/4 c sharp cheddar cheese

1 c of your favorite salsa

1 20 oz. bag of Hash Browns

6 farm fresh eggs

Flour 10" Burrito Size Tortillas


Directions:

  • Brown the Hot Italian Lamb Sausage - after browning drain any grease.

  • Add cream cheese and salsa to sausage.

  • Heat this mixture until the cream cheese is softened and then add the cheddar cheese.

  • Mix all ingredients together well and set aside.

  • Cook the Hash Browns according to directions on the package and set aside.

  • Scramble the 6 farm fresh eggs your favorite way and set aside.

  • Fill each tortilla from each dish.



Lamb Loin Chops with Green Bean & Potato Salad


This is a simple easy dinner that is Gluten Free!


Ingredients:

½ cup fat free plain greek yogurt

¼ cup extra virgin olive oil

1 lemon, zested and juiced

2 tbsp. chopped fresh dill

1 tbsp. chopped fresh chives

1 tsp salt

½ tsp pepper

1 pint cherry tomatoes, cut in half

1 lb green beans, ends trimmed and cut in half

2 lbs small red new potatoes, larger ones cut in half

2.5 lbs lamb loin chops

4 cloves garlic, minced

3 tbsp. olive oil

1 tsp salt

½ tsp pepper


Directions:

For Potato Green Bean Salad

  • In a large bowl, whisk together yogurt, olive oil, lemon juice and zest, dill, chives, salt, pepper, and cherry tomatoes; set aside.

  • In a large saucepan bring 6 cups water to a boil. Add green beans and cook until tender, 3 to 5 minutes.

  • Remove with a slotted spoon and add to bowl with dressing.

  • Add potatoes to already simmering water and cook until tender, about 10 minutes.

  • Drain potatoes and add to bowl. Toss to coat.


For the lamb chops

  • Combine garlic, olive oil, salt, and pepper in a small bowl. Place lamb chops on large tray and rub garlic oil mixture all over lamb loin chop; set aside while grill heats.

  • On a gas grill, turn all burners to high, close lid and heat until grates are hot, about 15 minutes. Scrape grates clean.

  • Grill lamb chops about 6 minutes per side or until cooked to 145 for medium rare.

  • Remove to clean plate and let rest 5 minutes.

  • Toss potato salad again and serve with lamb chops.

Herb Roast Leg of Lamb


An herb rub makes this leg of lamb so good!


Ingredients:

1 clove garlic, minced

1 t natural salt

1 t black pepper

1/2 t ground ginger

1/2 t ground dried thyme

1/2 t dried sage

1/2 t dried marjoram

1 T soy-sauce

1 T vegetable oil

1 bay leaf

2 lbs leg of lamb


Directions:

Preheat oven to 300 degrees F

  • Mix garlic, salt, pepper, ginger, thyme, sage, add marjoram in a bowl.

  • Stir soy sauce and vegetable oil into the garlic mixture until loosely paste-like; add the bay leaf.

  • Cut slits into the lamb on all sides. Rub herb mixture over entire surface of lamb, massaging it into the slits. Put lamb in a roasting pan.

  • Roast lamb until browned on the outside and red in the center, about 50 minutes for rare. An instant-read thermometer inserted into the center should read 125 degrees F.

  • Cover lamb loosely with aluminum foil and cool about 20 minutes before carving.
